
Grapes are hand picked and Cabernets and Pinenc undergo a vinification at 23°C to obtain fresh black fruit whereas Tannat is fermented at 28°C to extract colour and rich tannins. The “pigeage” technique is used to obtain smoother texture and open fruit from the start. This is a rounder expression of Madiran. Thanks to the use of only the ripest grapes and careful winemaking, Rive Haute Madiran offers wonderful dark fruit flavours with good concentration and ripe tannins. It can be enjoyed right away,or with red meats , cassoulet, game, duck or flavourful dishes with garlic and onions.
